Crock Pot Breakfast
I usually make this for dinner, not breakfast. You certainly could make it the night before, let it slow cook over night and have it in the morning though :) The amount of ham, potatoes and cheese you use depends on how much you're making and in what size slow cooker.
Ingredients:
- Ham ~ I usually buy a couple of ham steaks, easy to cut up that way
- Potatoes ~ I like those little red ones
- Cheese ~ Sharp cheddar is our fave
- about a cup of milk
Spray the Crock Pot with cooking spray. Slice or dice the potatoes. Try to make them equal size, and not too big. Cut the ham into equal size cubes. Shred the cheese, or be like me and buy it already shredded :) Layer ingredients into the Crock Pot, starting with the potatoes followed by the ham, followed by the shredded cheese. In my medium size Crock Pot, it comes out to about 3 layers of each, ending with the cheese. Pour the milk over the last layer. You usually need some sort of liquid in a slow cooker, and milk just seems to go with this recipe. You won't really see the milk, or even taste it, it just keeps everything from drying out. Cook on Low, the time depends on how much you made. About 6 hours is usually good. After 4 -5 hours though, you might want to open the slow cooker and check the potatoes, poke 'em with a fork to be sure they are tender. Also, as it's getting near the end of the cooking time, I add some more cheese on top.
I usually make this in the morning and we have it for dinner. Then the next morning it's great heated up, with some eggs to go with it.
*Smoked sausage also works well, hash browns too.
